Celebrate the Holidays with Bird’s Eye Vegetables–Recipes and Giveaway

As we transition into the colder months and holiday foods, I think it’s easier to put veggies out of your mind. Here in New England, we’re done with gardening and visits to pick-your-own farms are closed. But with cold and flu season upon us, it’s still important to make sure kids are getting all of the nutrients they need. Bird’s Eye frozen vegetables are convenient and fresh, even when your grocery store produce selection is looking weak. They’ve given me a $50 American Express Gift card to give away to help you with your holiday meal shopping, but I also wanted to share some of their great recipes using frozen veggies (images courtesy of Bird’s Eye).

Green Monster Pizza

A nod to the Red Sox? I don’t know, but these bagel pizzas are super quick. Bonus points for putting the broccoli in the shape of a Christmas tree with some peppers for ornaments…

Mini Broccoli Quiches

When entertaining, I love mini-bites that are easy for guests to pick up and eat without a fork. These mini quiche fit the bill and you could sub in a different veggie for variety.

Warm Taco Dip

It’s not always easy to find a quick recipe to bring to a holiday party. This warm taco dip would be great, especially if you have a small crock pot to keep it warm.

  1. First off,I want the broccoli quiche recipe. :-) Our family eats a spicy crab and shrimp soup for Christmas Eve, and now that we live in Texas, we follow the tradition of tamales and margaritas!

  2. Where’s the option for “all of the above”? I like so many holiday foods naming just one is pretty tough. I do love a good Christmas Ham though, glazed, baked to perfection, served with super fresh rolls & assorted specialty mustards :)

  3. Birdseye lemon spinach couscous is my favorite hot lunch when the weather gets cold. For dinner, we love to make garlic and herb couscous and serve this with Birds Eye Steamfresh frozen vegetables. Our must-have blends are Lightly Sauced Italian Green Beans with Garlic Parmesan Sauce, or Lightly Sauced Tuscan Vegetables with Marinara Sauce, or Lightly Seasoned Garlic Cauliflower.
