Generally speaking, I love my job. I don’t get paid enough, and there’s a lot of uncertainty in the freelance world, but I love what I do. And I know that when I’m able to shift to more of a full-time role, it will only get better. But if I had any doubt, Frito-Lay and The Motherhood put it to rest last week with an invitation to get together with some of my favorite bloggers to eat chips and dip. Yeah, that’s hard work.
Unfortunately, my dear friend Melanie was hit by a car just the week before the event and couldn’t attend. It definitely cast a pall over things for me. Still, emotionally, there’s nothing better than getting together with girlfriends over yummy food. Jodi graciously hosted us, and Kim, Sarah and Charlene were in the mix, too. It was a much-needed mom’s night out.
We were apparently asked to bring a healthy dip. I missed that part of the memo because my dip wasn’t healthy at all. It was, however, yummy and incredibly easy. I guess that’s something. There’s nothing particularly unique about the dip, as the recipe is easily found online, but it’s something we used to have at parties when I was younger (pre-Internet), so it has a certain nostalgia value for me.
Chili Cheese Dip |
- 8 oz cream cheese (can substitute Neufchatel for lower fat content), softened
- 8 oz shredded cheese – a pizza or Mexican blend works well
- 1 can Hormel chili w/out beans
- In a glass pie plate, spread the cream cheese evenly.
- Cover with the chili.
- Sprinkle the shredded cheese over the top.
- Microwave 2 minutes, or until cheese is melted.
Our dips were paired with some Frito-Lay chips, namely Fritos Scoops, Tostitos Scoops and Lays. I love the Tostitos Scoops with dips, and the Fritos Scoops as well. The Lays are more of a sandwich-pairing chip for me, and they weren’t much of a match for the hearty dips we prepared.
